Jailbreaking iPhone 3GS

I've never jailbroken (is that a word?) my iPhone and before iOS4 comes out I thought I'd give it a go. Does anyone know of a good guide/manual on how to do this?

Easy, just run Spirit Jailbreak. Google for it. This might change with 4.0 but works perfectly on anything else.

And once I've jailbroken my iPhone, what's the next step? Does it mean I can customize it in different ways or do I need specific applications to do that?

Run Cydia - everything's in there. For example to customize your appearance, install Winterboard from Cydia, and some themes.
