Yeah but you have deltaT and delta"t". If you increase the time the water is exposed to heat you need less heat to get the same result. If you get where I'm going with this.

Yes but the water is flowing fairly quickly. If you want to get it heated in a few milliseconds from cold tap water to shower water at a reasonable flow rate then you need big power.

Its not like it has time to sit in a tank like a geyser. Its in and out.

Would you want to bath with cold or luke warm water? You dont need 30kW per se but I dont see anyones wife and kids here being happy bathing with a 7kW instant heater than will heat the cold water to some 25 degrees.

8L/min is 8L/min (or whatever flow rate you need/want). The variables are how long the section is that is in contact with that heat and the design of the heat exchanger.
 
Wrap geysers in blanket and insulate 2m of hot pipe coming out of geyser as this acts like a heatsink sucking heat out the geyser.
