DJK, do you think if I left the baking powder out of a cookie recipe it'll make a difference to the taste?

No, but it will change the texture, and 90% of the food we don't like is based more on texture than taste. Eating is an all round sensory experience, and a cookie just aint a cookie without the crunch. Well, the crunch will still be there but it will be a very dense cookie - baking powder induces bubbles when it cooks which makes them light and crunchy afaik. I don't do much baking though to be honest...
 
Pretty much right.
Don't bother dong it without the baking powder. It changes it completely and it's not as nice. It's very... doughy.
 
:( ok. actually what I wanna do is this: I got some letter shapes. it's eldest's bday party this weekend. ( I am making cupcakes instead of cake this time round.) So, I thought I would make some cookie dough, cut letters out and bake it. and decorate it later.

but I am a bit worried that the dough would rise too much and make letters obscure. what do you think?

EDIT: I want to write "happy birthday" with the letters

How about baking it first, then cut out the letters then put icing over it?

Good luck cutting letters out of biscuits. It just won't happen.

HC: use the baking powder rather - it shouldn't make them rise too much at all. Why not make the letters out of brandy snaps rather? That could be interesting...
 
tried brandy snaps once, was a huge disaster. and I don't have a lot of baking ingredients, so I can't afford any flops...
 
ok, I'll just try it and see. will just make sure the recipe I choose doesn't call for a lot (hopefully only 5ml)

I don't believe that. You probably just didn't roll them into shapes quick enough and they hardened. Brandy snaps should be a breeze for an accomplished cook like yourself.

Butter, sugar, syrup into a saucepan and melt. Once melted, remove from the heat, mix in ginger and sifted flour. Pour on to baking tray and bake at 180 for 5 minutes - simple! Put the mixture into a piping bag and pour the shapes (letters) onto the baking tray - and then allow them to cool on the baking tray itself so that they harden into their shapes.

Here's the quantities:

3 tablespoons of syrup
90g butter
1/3 cup Sugar
1/3 cup flour
1 teaspoon ground ginger
3 tablespoons of brandy (optional)
 
last one seems ok-ish. first one is the winner for me, though. 2nd one also not too bad. But I think I will try the first :D:D
