If it wasn't for FLAC I would have also said just use iTunes as it does this restructure quite well.

Just shows you how unfounded the iTunes hate is, considering everyone is running to third party lesser known apps to achieve this result.

It's more a case of people wanting to manage their libraries themselves. iTunes, if left to its own devices, actually does this very well, but a lot of people are very accustomed to self-management.
