You can add chili but in predominantly tourist places isn't cooked to be spicy, so they use less spice including things like galangal, garlic etc. It's not the same. Besides in the South it seems even if you ask for spicy they hold back.You should add Pet Maaaak after the dish name... means make it very spicyThey'll understand if you ask in Thai lol

I had a proper Red Fish Curry on Koh Phangan, I thought I am going to die. It remains the spiciest dish I have ever had.
But that was in 2000 and back then you only got Thai Restaurants and the odd Italian place.
