It was almost impossible to get spicy spicy in Phuket, I managed to get some decent heat in Ao Nang.
Chiang Mai isn't holding back though. I love it.

Chiang Mai isn't holding back though. I love it.
You can add chili but in predominantly tourist places isn't cooked to be spicy, so they use less spice including things like galangal, garlic etc. It's not the same. Besides in the South it seems even if you ask for spicy they hold back.You should add Pet Maaaak after the dish name... means make it very spicyThey'll understand if you ask in Thai lol
That stewed pork over rice is delicious, I have tried to replicate it here at home but can't.
Chiang Mai has the best cooking courses, it is cheap and a half day course actually takes about the whole day.

I think the problem is that those cuts are probably simmering in the same batch of sauce that her mother used to cook in. If you start now you'll have an amazing version in around 25 years time

Even if you can speak no other words of Thai, most European and American visitors to Thailand will quickly become familiar with the Thai word farang (often mispronounced (even by Thais) as falang - farang with a slightly trilled 'r' is the correct pronunciation.) It's basically used to describe caucasians, though African-Americans will sometimes also be known as farang or as farang dam ('black farang'). Farang is also the Thai word for the guava fruit, so you can expect to hear farang eating farang 'jokes' if you happen to purchase any.

One of my friends struggled to get a decent curry in Patong, so when we went to Phi Phi, he made sure that they understood he wanted Thai spicy, not tourist spicy. What he got was delicious, even though it was slightly unpleasant.
I had a proper Red Fish Curry on Koh Phangan, I thought I am going to die. It remains the spiciest dish I have ever had.
But that was in 2000 and back then you only got Thai Restaurants and the odd Italian place.

Don't know if it's just me, but I couldn't stop eating them. There was one street stall close to the place we were staying that sold them and I stopped there nearly every day to pick up a bag of them. Then I'd usually have to fight off the rest of the family to make sure they left me some!
