How do you delete an entire sms (no just leave an empty conversation) from an iPhone (3Gs)?

Swipe your finger from left to right on the SMS itself, or tap Edit and then the 'no-entry' button. That's iPhone 101 basics...
 
Can someone explain how to do this? Is this the reason that my jailbroken iPhone enters recovery mode when booting it up?

Yes there is a reason:

Your iPhone is newer stock. Therefore there is only a "tethered" jailbreak available at the moment. So unfortunately, every time you reboot your phone it will enter recovery mode and you will have to run blackra1n again in order to jailbreak it. Otherwise it will return to a non jailbroken state (as you will be forced to restore afaik). Be sure to backup in iTunes if you wish to restore.

Don't give up all hope though, I'm sure a non tethered jailbreak will come soon enough!

They charge $2 for every dollar.

Which firmware did it come with? 3.1.2? If so, chances are you can only perform a tethered jailbreak (and subsequent unlock) which means that if you do jailbreak it (and unlock it after that), you will need to connect it to the PC and run the software (blackra1n) again every time you reboot the phone, otherwise you will need to restore the phone. I think that this will also lose the unlock.

If your phone came with an earlier version, you can run blackra1n and select blacksn0w to unlock.

This is kinda iphone related... but who's on the droolfest for an Ipad?!!!

Not me... it's too big, but I do forsee this technology being used in schools! Would help a lot saving our children from hunchbacks from all the books they have to lug around!
