Cool so I now have MMS & Tethering working by first installing a slightly modified .mobileconfig file and then adding the MMS details.
Works like a charm and no IPCC or whatever hacks required.
I'll see if I can find a place to host the .mobileconfig file. I could put it on my MobileMe iDisk but a little worried about data usage even though it's tiny.
Once you have the .mobileconfig file you can just email it to your iPhone and click install on the attachment, it'll add it and enable the Tethering option. After that just add the MMS settings.
Both MTN & Vodacom use 'internet' as APN so it should be fine. For other networks you can just edit the APN string with a text editor.
