Morning Biltong noob. :D Put the bulb back. Our humidity is between 60 - 70 %. I'm sure it's the same or higher than your area. I've read here you can go the first 24Hrs without the bulb (To prevent a dry crust on the outside), BUT, thereafter put the light on. I have the light on all the time. (40watt)
If your meat doesn't have mould by now, it's ok. Just add the light :)

I would still use a small lightbulb for the first few days in humid costal areas.
 
I will definitely use the light the next time. As it was my first attempt I was scared it would dry out too much.

How will it dry it "too much" if it dries quicker, you just take it out sooner... drying is a gradual process... it doesn't go: wet, wet, wet, feel it in my fingers, DRY!

Thats exactly what I thought would happen. Im a dissapointment, sorry dad
 
Don't sweat it... you'll just end up adding more humidity to the air if you do! :p

Getting closer to the truth I think... I was probably sitting there.... hovering over it like a hawk... waiting for the exact moment it would be perfectly dry, just the why he likes it.... all the mean while his saliva just dripping... adding to the humidity :D

Don't sweat it... you'll just end up adding more humidity to the air if you do! :p

Spiced Monday and left over night. Hang on Tuesday afternoon.

Use a wood bowl or paper plate for the sliced biltong. Plastic is so uncool.

So anybody tried making their own bacon yet?
Need something to keep the drier happy between batches of biltong.

Thanks. And sorry... Lol. Use the plastic bowl to catch the slices from the slicer.

Making bacon or drying bacon ? :crylaugh:
