The Official Homebrewed Chilli sauce Thread

Jip. I take an old glassjar and drill a hole in the lid for the bubbler and grommet.
Did you get them online? I'm trying to find them locally so I don't have to pay shipping, but there doesn't seem to be anything around Mpumalanga

There is a nice YouTube channel I follow called ChilliChump - its run by a South African who lives in the UK. Everything from growing chili's right up to the making of some amazing sauces. I am a big chilli fan, so this channel does it for me :)

Hmmm...maybe something green next time .

Cooking green things kinda ruins the nice bright color. Anyway. Green chilies, green bell pepper, spring onions, pineapple sage, mint. Nice fresh flavour with a bit of heat coming through.

Deciding what to do with this...

Shaun is great, I knew him when he used to still live in SA and Im good friends with his sister.
He has some really great guides and explains things really well.

About to make 2 actually because these bad boys have been fermenting for 40 days :D

Habanero on the left, smoked cayenne on the right.

Scrap that, only made one now because we need more sauce bottles. Did the smoked cayenne one, keeping the habanero back until we have bottles.

I smoked lemon halves when I smoked the cayenne chillis so they've been patiently waiting in the feeezer until this morning. Used the lemon pulp and just removed pips. Added lemon juice, apple cider vinegar, a bit of xylitol and some garlic powder.

It's a great smokey profile with a lot of lemon, as intended, with a nice natural sweetness from the smoked lemon pulp boosted by the teaspoon of sweetener added. It's also surprising hot!
