Those are basic ingredients most peeps have in their kitchens anyway. No additional cost.

It's all about effort, not cost imo...

If you haven't got nutmeg, for example, then it looks expensive to buy.

Maybe, but nutmeg is so rarely used by most home cooks that it isn't a necessary ingredient. Yeah it works well in a bechamel, but most people wouldn't even think to add it in the first place. Besides, it's not like the packet sauce contains freshly grated nutmeg...:D You use so little of the stuff though that it might seems steep, but it's not in comparison to how long it will last if you store it properly...

It's the reason I buy it. It doesn't say "grated nutmeg", but the taste comes through so it's covered in the "flavouring" or "spices" ingredients list. I don't think there's an artificial nutmeg yet. The same applies to sauces with wine. We don't always have a bottle of wine open. Same applies to Sherry.

I reckon if more people cooked from scratch more often then there would be open wine and sherry available. Us alcoholics don't have that problem though...:D
