WhatApp messaging is encrypted according to their website (http://www.whatsapp.com/faq/general/21864047), so you're going to have a hard time intercepting anything useful.

I'm guessing Viber would be the same but I'm not sure.

Those services are utilised for secure connections between parties.
The attempt to intercept them would be considered an invasion of privacy in my opinion.
