How'd it come out
Would suggest that recipe, works well here in RSA, only 2 ingredients to replace with something we get here.
Tastes great, when serving it, try and do it with sticky rice.

For the spice tell your local Indian spice shop lady what you want to make and let her mix you up a spice, they usually mix what is local pallet and works well

Somehow we inadvertently ended up ordering another three days of hellofresh, so day 1: dhal with pumpkin seed salsa and naan breads

Based on my mother's recipe for a 'Thai Chicken curry', this was ultimately a fail. The sauce was more like a puree, not sure exactly what I did wrong.

A proper Thai green curry paste is pretty complex and a lot of the ingredients can be hard to track down. Stuff like k****r lime leaves, dried shrimp, galangal, lemongrass. I made a semi-authentic version once and it was delicious. The core flavour is the lemongrass. Chilies are quite optional and mainly depend on how much heat you want. Once you have a good paste, you're fine with just normal coconut milk, or add stock to make a more brothy taste. It's good with oriental mushrooms and a ton of cilantro.

Now I want to make a Thai curry. It's a mission to get the ingredients in this country though. SA is actually much better for food than NL. And meat here is so pricey. I really miss the N1 Chinese supermarket
