Interesting scenario.
I assisted a mate with setup of WiFi at his previous house, I run a TP Link Omada controller there.
Old house had WiFi 5 (2x EAP225 indoor, 3x EAP225 outdoor).
Moved houses and decided to upgrade to WiFi 6.
Purchased 2x EAP653 and 3x EAP615 Wall-mount

Set the new Access points up in Omada, and then the nonsense started.

Mobile phones show a message "WPA3 connection is required".
Only way to solve is to forget the WiFi and re-add it then it works.
Give it some time, walking around the property and the message will return again - very weird

This site gives an interesting solution, but it is a bit of a hammer vs scalpel here In short, "turned off WiFi 6".
I want and use WiFi 6 ...

WPA3 is not a requirement for WiFi6.
Disable 6Ghz channel if it's enabled on the controller.
