As you can see, there is always a groundwork of addons.
Some addons are only that good for some classes.

I would say to get:
Xperl
HealBot (yes even if youre not a healer, its THAT awesome)
Recount
Omen
Bartender


From there on, most everything is class specific or to your taste.
On my DK, Quartz works best for ME to monitor diseases, but on my rogue it falls short.
On my Rogue i use SliceAdmiral, which has no other use for any other classes, but is pure awesome for Rogue.

On my Pally I use nothing, pally is just that damn simple.

ye i know big is ugly, but i do that so i'm able to see duration of debuffs and cooldowns, also party members health while in arenas:| Thats also why i use a double bar at the bottom.
Play with addons, then play without. You will notice a huge speed improvement.

The Default ui may seem ugly and gay, but once you start using it you actually learn to see that its quite well designed AND FAST!

Although the raid frames still need some help. Use grid for that

I have, I only use 10mb of addons and it makes 0 difference to my ping and fps if I take them all off.
 
GearScore seems to be a new trend and i dont see the problem with it i love it, it will tell you the average gear score of a character in your vicinity simply by hovering over them with your mouse, this gives you a quick idea of the level of gear the character has but not skill unluckily :P

Very nice i installed it last night , i also see people in trade starting to ask things like "LF healer ICC 10man GS 5000k+" so meaning the healer must have at least a gear score of 5000. To view your own gear score you simply open your character page and you will see your score.
 
You guys can try gearscore-lite instead if you really want to make sure you dont spam ect.

As for Avert's screenshot...I get the same fps sometimes more sometimes less depending, but there in orgrimmar usually 190-230fps, with 200-230ms latency. And I have A LOT of addons.
 
GS is bad. If you need an arb number to ascertain your equipment viability or that of others, you fail. It doesn't check whether you are appropriately gemmed or enchanted for example, only the 'quality' of the gems or enchants. Same with gear. I could wear Paladin spellpower plate on my DK to get my GS higher if I wanted to, for eg. But it would make me worse. And some of my BiS stuff is still ilvl 200 (eg: Greatness Card).

This addon is an abomination and should be incinerated. Lrn2inspect.

im not talking about numbers really, im talking about feeling. I guess pve-ers dont feel the difference though. Each to his own anyway.
 
@MJ, I posted this 'guide' or rather intro to Power Auras under our guild forums, reposted here, maybe it'll help. It's for an Arcane mage, but the principle remains the same.



After figuring it out, the power and potential this thing has is insane. For eg I've configured it to for eg play a custom sound and overlay a huge green exclamation mark when i get Mutated Infection on Rotface, or Burning Bile on TOC Beasts, which helped me react that little bit faster. It's definitely worth it to take some time and figure it out, once you have you'll wonder how you got by without it.

I installed it and when trying to configure it, thought to myself, ah poo poo this thing. :) Now im busy configuring it slowly to what I want it to be. :)
 
GS is a nab program but it still is usefull though i normally look at achievements and HM's since there show if you have skill or not.
quartz is amazing due to our latency
i have quite alot of addons and use nearly all of them here is my list
AtlasLoot- ima loot whore gota know whats gona drop :P
auctioneer- wont ever farm dailies again cash making machine this one
BindPad - to keep track of your binds a have to if you not a clicking noob :D
DBM- a have to for raids
Decursive- ima mage and i need to decurse alot makes my life easy
Dominos - good UI tweeker
Forte - best CD watcher in wow
Gladius - best PVP addon for arena
Grid - best raid grp manager
MikScrollingBattleText - hate blizzard combat text
Omen - as a mage i always over agro :P
PitBull4 - for user interfaces and user bars
Prat-3.0 - chat addon FTW makes your chat very neat and much more easy to use and read
PowerAuras - best buff tracker and procs tracker
Recount - need to know what my dps is and why i died
SatrinaBuffFrame - neat buff bars
SexyMap - hides all my addon icons
TBag - a must best bag it the world, also organizes it according to type of item
ZOMGBuffs - keeps track when i need to buff people and who are missing food\flask buffs
OPie - best portal management addon in the game ;D

I don't know if you are looking for a complete UI or just some addons, but in my opinion it helps to start of with a good ui.

As a base, I now lately started using TukUI.

To add on top of it I use:

- !BugGrabber : Makes sure I don't get annoying popups about addons causing errors when they do, instead logs it to the chat pane
- Afflicted : I use this in PvP to track the cooldowns of oponents so that I know when to be ready to prevent a problem
- BaudSpamFilter : Prevents 90% of gold spam in general/trade chat and some whisper, but I found I need to block whispers from level 1s to block those
- Broker2Fubar : Mainly to just get WIM on to Fubar instead of on my minimap
- ClassTimer : I use this on all classes to track debuffs on my target as well as buffs on friendly targets ect.
- Chatmod : Make chatting a bit better
- DBM : Everyone needs a BossMod, although I see there is a new great alternative called DXE encounters @ http://www.wowace.com/addons/deus-vox-encounters/
- ErrorMonster : Remove the RED text in the middle of my screen, I mean I know I spam my abilities when I do not have enough rage/energy
- Gladius : <ust have for Arena
- Mutilate : Sometimes I am too lazy to remember to keep up buffs/debuffs this makes it easy for me while raiding so I can watch TV
- OmniCC : Puts a cooldown count on your buttons, but give it in seconds instead of minutes
- Postal : Great addon to simply opening 100000 mails from the AH
- PowerAuras : I could use this more but mostly it shows a few important abilities only
- Sapper : Again for PvP and arena to say when my sap/blind gets broken by trinkets or someone doing damage to the CC'd person
- Skada : I use this in place of Omen/Recount ect to show my tables for Aggro and DPS, although Tukui already has a threat meter bar
- TipTac : My favourite tooltip frame replacer
- WIM : Makes chatting easier in WoW, alot like having MSN inside WoW
