i have never heard of pork fat fried chips and i hope i have never eaten them ...but yeah i would suggest play it safe at 1st then maybe try it out

I take it you a veggie? I may need to test recipes on you then as I don't know many veggies

It's definitely an easier way to go without many drawbacks. I've made burgers sous vide, it'll definitely help with prep and making sure you've got the burgers cooked to exact temps. Just make sure the outside of the burger is properly caramelised when you're done and also properly warmed through if you're holding them in a cold storage before service.

my dad did that for his food truck. worked like a charm. tonight had a steer burger, normal one, nothing special. outside was brown, inside was raw :sick:

If you scroll back a couple of pages this has been discussed in depth and the limitations of doing something along these lines in South Africa.

Im aware of the trucks in South Africa but they don't act like the ones in America or Australia
