Chilli sauce reviews

Salt, fermented peppers, vinegar. The rest is pretty optional. I detest garlic.

However, fermented red chilis* turned out a lot better. That recipe's measurements wasn't so great so I eyeballed and used less flakes with a different approach.

*Leftovers are now chilling becoming vinegar

Rule of thumb with ferment is usually 2-3% of weight or 5-6 of salt, if you’re overly paranoid. If you strain your sauce you can use some xanthum gum to thicken it.
 
My plants didn’t do well this season, bad harvest landed buying 2Kg of fresh reapers and will be doing 500g ferments at 3/6/12 months intervals to see which is best.

Damn, that sucks... It's so frustrating when something you've planned falls apart... I'm in a similar boat this season. Ordered a pack of chocolate bhut jolokia seeds from a reputable seed supplier, but out of the 12 seeds I germinated and nurtured over the last year, it seems like only one was an actual choc ghost pepper. I ended up with a pile of choc peppers that are about the same heat level as jalapeños, probably no more than 5000 SHU. They looked and smelled spicy, so I decided to pick one which I chopped finely with some garlic and covered with some white vinegar, and left in the fridge overnight before loading up two toasties the next day... Had no bite whatsoever... Pretty disappointed... I've grown quite a few varieties of super hots over the years and the original ghost pepper has always been my favorite to ferment, that, and birdseye... Great flavour profiles, never been a big fan of habaneros... I also only grow one variety each year so that I can save some seed stock that isn't cross-pollinated. However, over the years, I lost my original ghost pepper seeds and decided to do a choc variety this time, but as I mentioned, they were definitely not choc ghost peppers. And yes, the actual choc ghost pepper I got from my only plant blew my head off when I decided to do the same thing the following weekend...

Some harvest pics from today, including an actual choc ghost pepper from my only real plant (the other 20 or so pods are still ripening.) I'll probably only do a 500ml simple ferment, and the others I'll make into a chili jam since they are so mild...

Yes. Good seed can’t complain.

Been using these guys of late though, great selection. Believe they are based in Cape Town.

 
Some sauces from the chili festival. Was a good day out, fun seeing the chili eating competitions in person. Thx for the heads up @dualmeister .

Feel free to reach out to me and ill get you to over 80% germination. What cultivars did you struggle with?
My germination methods are not the issue, the seeds were mostly bunk. But thanks anyways.
 
How do they taste ? I see a onlyfans request :p
The smoky garlic one is almost finished, been using it on everything - need to email them and find out where they sell. The reaper one is indeed reserved for an onlyfans stream when my nipples are up for it.
