Chilli sauce reviews

Looking for a medium to hot chili sauce without garlic if anyone has some recommendation it will be much appreciated
 
This month's box from The Sauce Shop features Cook's Cabin Chilli Sauce Hot (Springs), Spicy Mamoo Peri-Peri and a Wild Fermented African Bird's Eye Chilli Sauce from Ridhwaan Foods (Killarney, Jhb).

The Cook's Cabin sauce is very sweet and not hot, in spite of the label. Would make a good narinade for meat if you like things on the sweeter side. The Spicy Mamoo sauce is a good thick consistency and the lemon, thyme and garlic really comes through. Pretty high heat level and very flavourful. Our favorite from this box is the Wild Fermented African Bird's Eye sauce. It's made with the traditional pure ingredients of a true hot sauce - vinegar, chillis and salt. You can smell and taste the fermentation in this sauce and that gives it an extra unique punch that elevates the natural heat and flavour in a great way. The hottest of the three.

Another good haul of sauces to add to our ever-growing collection :D

It's not the monthly sub box, but the launch of a limited edition Literature Craft sauce (only 6 produced, all shipped to the The Sauce Shop) meant that we had to place an order, of course! And who orders just *one* bottle of sauce?

So, new sauces and our thoughts on them.

The Fury Piri-Piri is best described as that great lemon peri peri taste you love from Nando's, elevated by a creamy consistency, I assume caused by the emulsion resulting from a perfect balance of oil and lemon juice. The birds eye chillis provide a great heat. This made me think back to ordering slap chips from Chippies in Cape Town slathered in their garlic peri peri sauce, only, better.

The Cook's Cabin Lowveld Ghost Reaper Peri Peri sauce has a nice thick, smooth consistency to it. Initial hit is sweet, and then a slow burn creeps in and stays for a while. I immediately thought this would be fantastic on a smash burger.

The Johnny Hexburg Caramelized Onion sauce is a repeat purchase, we all loved it that much. It has no heat, but packs a punch of flavor and would definitely recommend it.

Lastly, the star of this show and the reason for the order, the limited edition Witcher's Ghost Crucible from Literature Craft Sauces. The use of cashew nuts and apples in this sauce are notable in the thickness and earthiness of it. The lime comes through nicely and provides a great fresh distraction before the heat hits you from the combination of birds eye and ghost pepper. The moment the burning subsides, you'll be back for another hit!

Sauce box time! This month's box from The Sauce Shop features a gift box collection of 4 samplers from Black Mamba and Wushini Reaper sauce. Also, a note from Matt that gives us a clue of what we're in for

Nice to note about Black Mamba is that they are based in Eswatini (formerly the Kingdom of Swaziland) and the business was created by a woman from Columbia and a local man with a focus on ethical sourcing from small growers to support their community, and sustainable grow and manufacturing processes.

Their Pineapple Chilli sauce is a beautifully fruity sauce with a slight bite, and makes me think of a chilli jam. This would be fantastic on a grilled cheese! Very mild in heat.

The Peri-Peri has a nice creamy consistency with the flavor profile you'd expect from a good peri-peri sauce, with a nice tangy lemon note.

The Cayenne has a nice clean flavor profile with a definite sweet note and a hint of ginger. Very tasty and our favorite flavour profile out of the 4 for sure! Both the Cayenne and the Peri-Peri have a decent bite to them.

The Habanero sauce has a great zestiness to it with them using lemon and orange juice in the mix, that elevates the natural zestiness of the habanero fruit itself. Being a habanero sauce its heat is fairly high, but nothing regular chili sauce eaters would suffer from.

UNLIKE THE REAPER :ROFL:

One sniff of the Wushini Reaper sauce tells you you're in for trouble, but their take on a Reaper sauce is surprisingly tasty! Your initial experience when the sauce first hits is a delicate sweet note provided by the use of tomatoes as their main ingredient. Don't let it fool you though, it's merely giving you false comfort and you should strap yourself in for the fiery ride the next few minutes will provide you with! They're not joking about this being a very hot sauce, and while I'd definitely recommend it, I'd advise caution! This one's not for the faint hearted. I'm going to disagree with The Sauce Shop and say you should at least have a healthy fear of the Reaper :D

A tasty mild tomato and chicken curry with caulimash made by the other half for dinner this eve. Of course, once we'd served the minion, we needed to add heat.

Tried out one of our favourites Mascoville Coriander Habanero and the Wushini Crazy Curry which we'd previously not been too crazy about.

We both love the Mascoville and use it extensively on many dishes, but their unique and bold flavour eclipses the mild curry so not meant for this dish.

The Wushini Crazy Curry we both felt first time round a few months ago when we tasted it that it was lacking in curry flavor. Having now tasted it with an actual curry, we're thinking they meant it as a great heat raiser accompaniment that enhances the curry flavour profile without interfering with the original flavour profile of your dish, while delivering a wonderful hit of heat!

Lesson here, if you don't know it already, like any condiment, all chilli sauces will not go with all dishes. Keep experimenting and find the fit for the sauce you're trying, you'll have a totally different experience every time ;)

Update on the Wushini Reaper.

Burger night!
Both toasted buttered rolls with mixed herb greens, cherry tomatoes, red onions fried with garlic salt, Hellmann's Real on bottom half of bun, grated cheddar, topped with a home-made braaied burger patty courtesy of the other half.
One with pickled jalapeños and a tomato, chilli and onion spicy mix from a local butcher.
The other one has Wushini Reaper sauce on it, and hot dang that's a serious sauce
Punishment on its own, it's actually a really great sauce on burgers for a good hit of heat.

So being a bit goofy/tired, cos it was at the end of my nightshift - when I ordered my sub box, I did the payment first before completing all of my address details on the The Sauce Shop site.

Did alter it after, but was pleasantly suprised to get an email from Matthew from the website asking for my details via email as they received the PayFast dosh, but no address details. :p :D

So I'm looking forward to getting my first box in the next couple of days.

Tried the following:
Forage And Feast Habanero: This is very hot, gave up half way through the bottle
Forage And Feast Red Chilli Sauce: Just the right amount of burn and taste
Forage And Feast Jalapeno Sauce: Bit sweat not much burn to it, good all rounder.

Bought some hot sauce from a bottle store, Chilli & Garlic and was chunky homemade so not mass produced loved it will see if I can find it again and post a pic. I think I only paid R25 or R30 but much better than the mass produced over priced crap that you buy at shops.

Day made by Ridhwaan sauces! Got home to a surprise drop delivery from earlier in the day of their Wild Fermented Green Jalapeño and Wild Fermented Habanero sauces to add to our Wild Fermented African Bird's Eye sauce we received as part of one of our The Sauce Shop monthly sub boxes that we LOVED. Very happy to say that the two sauces received today are just as damn tasty with complex flavour profiles that both pack their own punch. The ferment lends a unique flavour profile to all three sauces, and the fruitiness that produces is perfectly balanced with a good vinegar tang. It's hard to explain the flavour profiles of any of them accurately, so let us just say, they're ALL GREAT, GET THEM!
