Reading all these comments, it seems to me that 2gb on a 1050Ti is more marketing than usefulness. Now I wonder about those 8gb 1080s?

I was referring to your specific general usage scenario in this case. If you are not going to use the video editing portion of Adobe, the only thing that should usually be hit is your processer, ram and hard drive.
Concerning the 256 bit vs 384 bit, in simplistic terms it refers to the amount of data that can be sent through to the video ram at once.
A video card with 256 bits and fast video ram will be equal in that one aspect to a video card with 384 bits and slower video ram, although this will also depend on the exact speeds of the video ram.
That is why a 256 bit video card can be faster than a 348 bit video card.

The 1050ti has similar performance to the 960, I had one with 2GB and it was not enough but I gamed with it.
A 1050ti will be fine for you, uses 75W and requires no external power, runs cool.
