The exact same risk with any other steak above well done. Yolo !!! Besides meat it self doesn't have listeria, so unless the place you eat at is shady the risk is low....If you work clean and disinfect equipment used for making carpaccio there is zero risk because beef will need to be contaminated by listeria.

I do it myself medium rare
I order at a steakhouse type place medium well - don't trust germs in others kitchens
 
It is cut from fillet and sirloin steak cutlets so yeah it is steak
So a burger made from ground sirloin is a streak rather than a burger? I think carpaccio deserves to stand on it's own and not lumped with a dish that is traditionally served cooked (over heat).

Besides, no one asks how you would like your raw meat cooked :)

You are a moron you know that, carpaccio is Italian invented in the 1950s, and can be prepared 'blue' by searing the fillet or sirloin before cutting into thin slices. I bet you wouldn't be able to tell nigiri from temaki.

um you are aware that steak can be served cut into slices especially fillet, especially things like fillet mignon which can be served either whole or thinly sliced, steak doesn't have to be served whole and most often it isn't served whole.As mentioned carpaccio can be seared ''blue'' and then sliced after which it is drizzled with lemon juice the acidity of the lemon juice cooks the meat :) Carpaccio is just a method of serving steak much like fillet mignon.

No "air-dried with spices... AKA biltong"

I like mine "rare" though but have eaten completely raw Wagyu in Japan.
 
Medium to well done. Medium to rare works if the meat tasts good, and the fire is hot, and the other food is ready.
