iirc those new 8GB iPhone 3g are $199. If we had to buy one in the US, would it be difficult to 'enable'/fix it for ZA providers?

I think this is optimistic - the iPhone is 3G capable and as a multimedia device one can burn many GB's per month. Blackberry is a different system and its multimedia usability is limited which means people don’t really use much BW on the system...Also I predict that the cheapest contract will less than R400 a month with "unlimited" email and web surfing. This is roughly what the blackberry is on Vodacom and there is no reason to believe that they will do anything different with the iPhone.
