You flash the Rom file like normal. It'll say aroma starting... Then you make your selections. It'll finish and you'll go back to recovery.
Phronesis is the best TW rom. Temasek is the best CM rom. Can't go wrong either way.

How do I check that? I'm not sure if the previous owner of this Note played around with that.

reboot into recovery? If you aren't rooted and running a custom recovery, you wont be able to install a custom ROM...
Step 1. Turn off your Galaxy Note or remove its battery and reinsert if after a short while.
Step 2. Press and then hold Volume Up, Home and Power at the same time.
Step 3. When you get some flickering on the screen, release the keys and wait until the Recovery Mode screen will appear. Retake the step until your Recovery Mode is completely booted.
Tell us what recovery it is running?

Ok. It's got Android System Recovery. So first I have to root, then flash recovery, then flash new Rom.
What is the safest root to use for the 9005?

Here's a guide to rooting and installing CWM recovery. I prefer TWRP, but it'll do. You can always change to TWRP if you want later.
