Snoek in JHB

Where do you buy snoek from? Fresh or frozen.

In PTA there were this caravan that sold snoek and it was nice and fresh. But i fail to remember where it used to stand.

Will Cape town fish market not be able to help?

Doesn't Woolies sell Snoek? I've never actually eaten it. I stick to Kingklip. What's it like?

Serqet. you make a nice and liquidy sauce and paint it on the snoek when you roast it over the coals.... with patatas and syrup....

And it's better fresh.

Fresh snoek in PTA? I seriously doubt it.

Luckely we have a fishery or 2 here in PTA :D

Made snoek some time ago: One with cream and apricot jam, and the other with cream black pepper garlic lemon and cloves.

I like your idea of CTFM though, will try them.

I bought a Cape Malay recipe book and I want to attempt a snoek biriyani.

Seven Seas near Cresta, maybe? We tend to buy frozen snoek in Pta, for braais. I thought the lemon + apricot jam recipe was awesome, until I did just lemon butter + chopped garlic. Heeeyahhhh!

If you find fresh, inexpensive Dorado (also called dolphin-fish strangely), it's a beaut for plonking on the coals. The best I've ever done though, has to be Kabeljou, with a honey-mustard basting.

Yip always in foil. I usually make a little bowl from foil and grillit in there so the sauce becomes nice and thick (the jam one becomes a nice "tamaletjie") :D
 
if you wanna do it open so's you get the smokey flavour without the fish drying out, do it on a Weber.
 
Isn't there a fishmarket by VW in Fourways @ Fourways Crossing? I've seen some awesome specials there.
