Ok lets start with the Beef.
Get's shot in the head at the Abatuar(sp?) Skinned and dropped on the cement floor till the guys come and collect them for the removal of the intestines.
The Beef then gets gutted, the people don't use gloves ! They some times nic themselves with the sharp big mother knives
Once done the meat is hanged on a conveyor and sent to a room where they wash down the meat and cover them and damp cloths.
This is then collected by different suppliers, the meat gets chucked in the back of a freezer truck after being carried on the shoulder of a poor guy who has been drving in the sun for 3 hours and now needs to load 50 big arse pieces of meat. Driven to the place of sale. There the meat is hanged again till the "Blockman" get's to it. Again, no gloves.
He hacks of meat in parts then puts it through a Belt saw which was cleaned 3 days ago. That same Saw has been cutting all kinds of bones and what not. (Have a look at the Blockman at your butcher, if he still has all 10 fingers..... he's new to the job.)
Now the meat is cut into more managable chuncks and stored again. When you get there and order a set cut he will go and take the managable chunck and do your required cut.
During this whole process when you take the meat from him. That same piece of meat was on the floor no less than 10 times, been handled by hands doing all kinds of funny stuff. The Butcher I worked at the Blockman never even washed his hands after he went to the loo
