From my experience of 20+ Meatzas

Do not use 2 eggs. A jumbo egg is actually too big for 500g of mince.

Remember it is just to act as a binder. Too much and it will be mushy and you'll struggle to get a firm base.

I make the cauliflower base all the time. It's awesome once you get it right - but not great when you stuff it up the first few times while learning.

I haven't tried it it. Please share the correct way of making the base.....I would like to skip the disaster efforts

Double cream greek style yogurt is safe, as is mascarpone cheese (which to me tastes more like mint and vanilla ice cream than cheese)

Macadamia nut butter is also full of win - few tablespoons worth and you will be full
