Just a question, how crucial is a fat intake for banting ? Do you actually focus on ensuring there is enough fat included in the diet ?

quiet crucial, fat is where you bodies energy will come from, since you aren't feeding it sugar anymore.
you don't have eat like fat all the time, just fatty foods, like avo, bacon, cream, cheese, etc

How about a low carb granola with nuts, seeds and toasted coconut

I love garlicy, spicy stuff. So my mince or chicken will almost always contain those.
Then avo and a salsa is always a nice addition. And of course just for some colour and crunch some crispy lettuce or coleslaw.
Sauce of choice.

So I came home and found my wife made some chicken shiz, so I thought, let me try make this taco thing.
First int he microwave, nope, didn't work, maybe didn't have it in long enough, was too soggy.
Next in the oven. A lot better, but not quite crispy, might be that I only have Gouda in the house in not Cheddar. Do you think that could be the reason? But, it worked great!

How does one know if you are eating too much protein?
Guys - as meat prices (and food prices) skyrocket as this year progresses, my pro tip is to stick with pork as its pricing should not follow lamb/beef/chicken as much due to feeding differences.
My cheap go to is pork hock's, or eisbein. I bought 2 massive one's earlier this week for R35 each. 80minute roasting in the oven at 180 degrees and they were done. My wife and I couldn't finish one. The second one gave us topping for our next night's homemade pizza and meat for work lunches - all for R70 and some electricity.
It is on our menu at least every second week or sooner. They are full of fat and perfect for LCHF
I use LCHF as a big saving tool - I spend WAAY less money in a month when on LCHF as meat goes so much further. Cheese is bought in bulk when on special and keeps in the fridge for many weeks. Free-range eggs also in bulk. I save at least R2k a month on LCHF versus high carb and sugar diet.
