Main bar:
* 160g Protein Powder (I used Nutritech Chocolate Powder)
* 1 x tablespoon cocoa
*1/4 cup peanut flour. I made these by just pulsing raw unsalted peanuts in my blender. Careful not to chop them too much as it will release the oils and turn to peanut butter. (As you can see from my photo, I could probably have blitzed it a few seconds more)
* 70g unsalted butter
* 75ml cream
* 1/2 cup smooth peanut butter
* Optional: 2 tablespoon sweetener of choice
1. Mix the protein powder, cocoa and peanut flour in a bowl. (You can add the extra sweetener here if you want it a bit sweeter. The peanut butter and protein powder already contains sugar/sweetener so I didn't add anything extra)
2. In a separate bowl, melt the butter and peanut butter in the microwave. About 30 seconds. Stir until combined and smooth.
3. Add cream to butter mixture and stir until completely combined.
4. Add the wet mixture to the dry mixture and mix until it is fully mixed and smooth. It will be a very stiff and sticky mixture so don't worry.
5. Spoon the mixture into an approx 20cm x 20cm over tray or glass dish lined with baking paper.
6. Smooth it out with a spatula.
7. Set aside
Topping:
* 30g Butter
* 1/4 cup Peanut Butter
* 3 or 4 tablespoons cream
* 2 tablespoons sweetener (I used sucralose sweetener)
1. Melt the butter and peanut butter in the microwave. Stir until combined and smooth.
2. Add the sweetener to the cream and dissolve.
3. Add cream to butter mixture and stir until combined and smooth.
4. Pour mixture over the bottom mixture in the tray and spread evenly.
5. Put in the freezer for at least 1 hour to set.
I cut mine into different sized bars and popped it in the fridge for consumption later.
