EDIT: Launching apps/games you will not notice the speed difference between a sata & nvme ssd as it's like 1-2sec at most difference.

Unless you are copying big files all the time or using io intensive productivity apps I would go for size over specced speed. For the price of a 1tb 970evo you can get two cheaper 1tb drives for example and it will still be lightning fast. All depends on your use case.
