Depending on preference, either Ubiquite EdgeMax or Unifi would do the trick. However, whether or not to go 10GBe all the way is a different problem.
Setup your cabinet close to where you will move the ONT to, and you will need the following:
Server Cabinet and fan for cooling
Router (EdgeRouter or USG, go with Pro model if you have requirement to route Gbps Internet)
Switch (EdgeSwitch 48 500W / Unifi Switch 48 500W, they both come with two SFP+ ports for 10GBe)
Cat6a Patch Panel
Unifi AP (depending on your requirement, go with ac-pro/ac-nanohd/ac-hd/unifi-6-lr)
Unifi Cloud Key if going with Unifi products
Cat6a cable and tools to clamp and insulate properly
UPS and power strips (if you don't already have on-site fail-over power)
Server / NAS to run your home lab
Cat6a cable will be sufficient for 10GBe, but only those that connects to the SFP+ ports on the switch gets 10GBe, it is usually your NAS and Server.
