Youtube throttling / stop video loading

Another thing that annoys me re. youtube is that a video will be buffering and playing, then I'll click back to an earlier point in the timeline and the buffering appears to start from that point again. Vimeo doesn't do that. Also a few times where I've clicked the circular 'play from start' button and it loads the whole video again. Youtube might be popular, but if you need to do anything beyond clicking 'play', it's full of little frustrations.

I prefer it this way. No need for any plugins or having to manually stop it every time.

But most people like to buffer the entire video then watch it when its finished.

Now you cant do that.

Any solutions to this please: For some time now DownLoadHelper doesn't display the available download options properly. In the past (I'm quite certain) it would say: 360, 480, 720 etc, whereas now it just looks like this:
