Yeah I'd do that but I don't have a portable gas griller and support staff. Perhaps that is what I do next. Go to the ad agencies and setup a table

Cost. Not everything grows on trees and I need to start small as I'm cash strapped at the moment.

Ok so you still at the very beginning thats fine, you have to start somewhere. If this is part of your marketing then at least you know there is interest and a market.
Be great when you can set up a few tables somewhere, if you do get anything going and ready for 1st November then I book a table:D

Yes and also testing the demand. Seeing if this is a road I should go down and not end in another failed exercise.

I don't have one. I'm having trouble sourcing quality pork. The farm I get my ribs and sausages from don't deliver shoulders to Durban.

How are you going to be smoking it?

There was the Bavarian Deli in the CBD but they've relocated to Salt Rock. They had the best bacon in Durban. The best, Jerry.

Any communications to them to please deliver to Durban are met with "Ya, let me see where my driver is and we'll call you back". Call never comes.

Also, most of their products have already been cold-smoked so useless to me for my purposes.

I'll find something soon though.

There are 2 brilliant ones in Joburg. Seemanns and Schwaben. You should maybe try and see if you can't get someone to get you some from there on a constant supply? Lot's of Joburg people driving to Durban for weekends at their families.

not sure. might just go with low and slow in the oven or on the braai with indirect heat. bought some oak smokey chips.
