Shot. Seems to be the same situation though, cold-smoked.

We bought a Lamb on order from them once. They prep the meat and work it for you to what you like. No idea if they still do it. You can for example buy a pig at set price per kg. They then make the salami and the likes at an extra charge per kg (Hope this makes sense). Dad loves his German sausages and travels to Seemanns just about monthly to stock up on German Sausages and other delicacies.

What kind of braai?

usually a mix of charcoal and wood. got one of those weber imposters. don't have the meat temperature gadget yet so I might wait till I get one. although 5/6 hours in the oven should do it.
 
I smoke pork shoulders in my weber without using the oven at all. Takes hours but it is well worth it.

So after a bit of thinking and chatting Ive settled on

The Burger Lab - Gastro Pub & Test Kitchen.

Bu doing this Ive taken out the fast food element and elevated the brand to something that you sit down at and enjoy a beer and burger.

I don't want another burger joint but rather to create something special.

Thoughts?

Excellent except the part highlighted in bold doesn't fill one with faith
 
Dude, you should try opening your brick-and-mortar in Centurion. There are no good burger joints in the area and I'm 100% convinced you'd have a packed restaurant. There are many affluent people in the area.

Also, Midstream has a 1-day market on end of October and you'll sell a ton of burgers and shakes during that time. I'll certainly pop by and so will a buddy from nearby Candlewoods Estate. They had a similar market at Heritage Hill across the road a while back and it was PACKED. The food stalls went out of stock before nightfall.

Gastropub is a common English term for pubs that focus on higher quality food. But not really known here in South Africa.

meh..no different to the million test my website etc. My only beef (get the pun?)is that there is no venue, so whats the point in a menu?

Aha, but OP is a forward thinker....when he does eventually open a venue...people will remember. I bet he's posting one other forums as well, making use of every cheap/free avenue possible to plant the seed
