A client of mine was burgled recently, and laptop and iPhone stolen. He logged in to iCloud with Apple ID, and blocked the devices. Now insurance needs details, and while he can see the devices, he can't get any information on them, like model number, etc. Is there any way he can get those details?

Try to temporarily unblock those devices, then chat with the thieves on iMessage and ask them to use one device to take a picture of the back of the other device, and vice versa. (Then they can attach those pics in iMessage and send them to you.)
Once they have responded to you and completed the task, go ahead and BLOCK those devices again!
Been through this a few times.
Make sure they are put into lost mode in iCloud. This will keep the tracking working either through wifi/your sim or the same thing that makes itags work depending on the models.
Once they have come to terms that they will not get them back, while they are still in lost mode set them to erase.
Once erased the location will disappear in find my.
It is important that they do not remove the device from their apple accounts it must stay there.
Once erased the thieving scum will need to sign into the icloud account to make use of the phone if it is kept on the apple account. By removing it you are giving them a free phone.
The client and their medical id contacts if setup will receive icloud phising smses, whatsapps etc that will try get their account details and/or unlock code. Tell them to never follow any links that they get. Apple will never contact them.
Depending on the network they used you may be able to see the IMEIs of the devices if a SIM the client owns was in them.

No idea. Some insurance doesn't ask.
Can one see the info of the stolen device though - specs, model, etc.?
Go to another Apple device should you have one and open settings. Select iCloud at the top and then scroll to the bottom and select the stolen device in question. All necessary info will be there.
If that is not possible go to https://appleid.apple.com/account/manage/section/devices
Select the device in question and all device info should be there.
This is obviously assuming that the devices were not removed from iCloud.
When Apple devices are stolen "mark as lost" should be activated in find my as a first step. This disables everything while requiring the device passcode to restore to previous state.
