It's hard to tell but by flame do you mean just heat?The Pizza Braai in particular only has flame on the top.
Top is important but you still need a hot cooking surface to bake the dough. Steel is fine as long as it keeps getting heated but I think a stone might store more energy.Part of my question was whether this was better than having flame beneath.
I use either in my kitchen oven. I tried the steel in my pizza oven but it just got too hot and burnt the base.
Most brick pizza ovens seem to have the fire inside off to the side so the heat circulates over the top of the pizza. The heavy floor means it retains heat.I'd assume this is how a normal wood burning pizza oven is operated?
