The company I work for has the usual corporate Exchange/Blackberry setup so I wanted to get a Blackberry and pull in my work email onto it. Do I need BIS or BES and what are the different costs on MTN or Vodacom?

I do not think Vodacom currently offers BES on prepaid, only BIS. It should still work if your company emails server supports POP/IMAP. The big difference is that your emails wont be synced over the air as it is with BES, so you would have to manually sync it with your data cable.
To my knowledge, MTN does not offer a Blackberry prepaid service.

MTN now supports Blackberry services on prepaid you dial *141*11# to activate it..

Can you bolt on the BIS service onto your existing contract (mine is a Talk 130/s) and then just purchase the Blackberry . Would the cost then be R59 / month on top of my contract cost ?

Don't get BIS/BES with MTN! It is dead slow and almost unusable half of the time. Vodacom's is much quicker.

^^ Agree with Sensorei above, Vodacoms BIS is running much faster than MTN right now, MTN is dead slow.
I have two BlackBerry's one with VC and one with MTN so I _know_ what I am talking about from experience.
MTN was not always so bad, it just got bad two months now and getting worse fast, so get yours from VC, for a lot less stressful BIS experience.
