Anybody have a nice curry recipe thye'd like to share?

I'm feeling like having some homemade curry tonight. My wife and kids are spending the day with her parents and I'd like to surprise her.

So, anybody have any winners out there? Don't worry about the hotness factor, we both like hot food. I'll buy something for the kids.

Chicken breast cubes
Stir fry vegetables
Noodles
Coconut cream large can


Spice your meat with normal meat spices and fry in a pan.
Add the stir fry vegetables
Add cooked noodles into pan and add some soy sauce to taste (until the noodles has a light shade of beige)
Add some curry powder to taste and masala powder or what you have along those lines.
Just before the end add the coconut cream and simmer for a couple of minutes.
Stir frequently to make sure the whole concoction doesn't stick to the bottom of the frying pan.

It's addictive ... at least the way I make it.

Yeah I do. I still consider it a beginner recipe.
Start with a cup of oil. Add a chopped onion or 2 with garlic. Add 2/3 tablespoons of Durban Mixed Masala. Fry onions and masala for 5mins. You can add a chilli and some cinnamon sticks for flavour. Then add your meat (I have done chicken/lamb and fish). Turn heat down a bit and brown the meat a bit (5 - 10 mins) then add your chopped potatoes and carrots/tomatoes and let it simmer with a lid on stirring ocassionally until meat and veg is soft.

Hope this helps. Easy and quick to cook. :) And I love the flavour. Try get a good mix masala.
 
What kind of curry?
I buy those jars of Patak curry paste and add onion, tomato, chicken, cream/coconut milk etc.
Very easy and very delicious.

Meh, its a long procedure to type out a decent recipe. I will do it for you & send it but won't have time today.

If you doing chicken or fish, put the potatoes in first & if you doing lamb then put the meat in first.

Ingredients for a decent curry:

Oil
Onion
Masala (decent one)
Turmeric
Cinnamon sticks
Curry leaves
Cloves
Jeera seeds
Chilli
Garlic & Ginger (crushed)
Tomato paste or grated fresh tomatos
Chicken (not filleted breasts please, use a braai pack cos the bones add to the flavour while cooking)
Coriander
Potatos (cut in half & not chopped)

I will put the steps down for you & you can try it the next time. Also, no coconut, banana's, paw-paw or span-spek, PLEASE, its a curry, not a fruit salad.

An easy, flippant statement to make refering to experience without any real knowledge or skill.

Fry 2 chopped onions in a little oil until almost brown. M*3r in chopped garlic, about 2 tablespoons (I use "Hout lepels", works best with curry). Now, if you like, you can sprinkle a little ginger or cinemon on the concoction.
Put in meat of choice, no water yet. Water will come out of meat. Toast both sides lekka. Saltand peppa. Add your curry mix (little vinegar, curry, sugar or chutney to taste [some people may add tumric ass well]). Now add a little water.
Let it cook a while, add potatoes and little water. Cook till potatoes is soft, serve and enjoy.

One thing I don't like, is cooking with steam pots. Especially curry dishes. Just a plain pot. I also like using a wooden spoon with curry dishes.
