Halaal/Kosher creamy chicken potjiekos recipes

Hey all,

Since there is now a muslim member added to my family, I can't use bacon anymore in my creamy chicken potjie. I made it once without the bacon, but it didn't come out too well. Is their anything else I can substitute it with? Or can anyone give me another recipe.

I use bacon in almost all my potjies - except my veggie potjie (I am translating directly, it does contain meat).

I will really like a substitute then I can use all the different recipes just as it is.

Buy high quality smoked beef. Not the weird, compressed, liquid smoke flavoured balls of meat, but the cured, hung, smoked, dried meats that cost a fair whack, but are well worth it. There are turkey bacon alternatives as well but nothing can ever substitute bacon properly...

"It can ultimately lead to people who only eat halal food ending up eating the real bacon - bacon from pork," he said.

"The Islamic opinion on this subject would be to avoid eating such foods which have a remote resemblance (to pork) because it could well lead towards eating the real thing."

Now we don't want this happening as it would drive up demand and bacon would become more expensive, NOT on! :D
 
Try United meat, Forsmay or Khans Butcher in Fordsburg for a variety of halaal alternatives.

Question: why do you need a bacon substitute if you're making Creamy chicken?
Is the chicken not good enough on its own?

Perhaps somne spices or stock can enhance the taste of the chicken and you wont need a bacon derivative.
 
If they're not strictly religious they won't care, I have a distant muslim relative that has no problem eating pork if offered.

I know he wouldn't eat pork and I would rather not violate someones religious believes/values. I already have a different grill for him to braai on.

You gotto keep all the foods sorts separate and the meat has to come form a halal butcher etc. lots of rules involved.

Pork being not eaten by Muslim and Jews are just a pratical consideration that has found it's way into their religions.

Before anyone knew of micro organisms and the health issues connected with eating pork they included it into their doctrine to safeguard themselves ... because I suspect they only knew of the problem with pork through trial and error.

Thesedays pork isn't as much an issue as it was in historic times so their religion can just as well disregard pork as a taboo.
 
Is it ok to braai on the same coals as your sinful meat?
 
CHICKEN IN CREAM SAUCE POT

6 Chicken Breasts
Chicken Spice to Taste
250g Rindless Bacon, Cubed
4 Medium Onions, Diced
60ml Smooth Apricot Jam
100ml Water
15ml Worcestershire Sauce
12 Baby Onions, Peeled
10 Baby Potatoes, Peeled
750ml Frozen Mixed Vegetables
300g Mushrooms, Sliced
Aromat to Taste
500ml Fresh Cream or 250ml Cream + 250ml Milk
1 Pkt Oxtail Soup
1 Pkt Onion Soup

Spice the chicken with the chicken spices
Heat the oil in a large pot and fry the bacon for about 5 minutes
Add the onions and apricot jam, and cook until soft
Add the chicken, worcestershire sauce and water, cover and allow to simmer for 15 minutes
Add the baby onions and baby potatoes, and simmer for 10 minutes
Add the vegies and mushrooms
Sprinkle with aromat, cover, and allow to simmer for 30 minutes
Mix the soup powder with the cream, and add to the pot
Cover and simmer gently for 30 minutes

But I don't use all that different onions and baby patatoes.

I also chop up my chicken pieces, not too small though.

I also marinade my chicken in a brown onion soup/mayo/apricot jam before I put it in the pot, but otherwise it is almost the same.

Halaal butcher isn't to difficult to find, and I just had braais with him before so quite easy to keep the meat seperate.
 
try seafood potjie

2 tuna steaks, trimmed
hake or kingklip, filleted and cut into portions
24 - 36 mussels, cleaned
1 T sunflower oil
1 medium onion, sliced
2 cloves garlic, crushed
1 medium green sweet pepper, seeded and sliced or 1 green chilli, seeded and chopped
1 tsp salt
1 tsp chopped fresh oregano
2 bay leaves
1 tsp lemon juice
3T tomato paste



Heat the oil and saute the Onion and garlic for about 5 minutes Add the green peppers or chilli, tuna, hake or kingklip, and mussels, then stir in the remaining ingredients.
Simmer over the coals for 30 – 45 minutes, or until the fish is tender.

That would take about 5 minutes. 30-45 minutes would require you cooking an entire fish in the potjie - whole. In pieces, it would dry out the fish and make it mushy. Most people think that cooking in liquid will keep meat moist, but this is a complete fallacy. Protein denaturing squeezes out liquids in meat regardless of what it is purged in. It also results in major changes to the composition of the flesh. Fish especially. Only scallops and squid/calamari benefit from a long cook, but then again you have issues as squid, for example, expels bitter compounds during this process, which is why most squid stews need to be over-salted to compemsate, or risk being somewhat bland and bitter...
