ProRes is a waste of space and time.
Unless you are bringing the footage into video editing software like Adobe Premiere or DaVinci resolve, there is no point in shooting in ProRes. ProRes is just an intermediary codec designed for video editing software.
There is no increase in video quality. ProRes isn't a "raw" codec, so all the post-processing sharpening and noise reduction that the iPhone does is also baked into the ProRes file. It's not like a DNG or raw image where you can do all the post processing in software, and bypass the phones internal processing.
I'm a video editor by profession and don't even bother with ProRes on my phone... having said that I never use an iPhone for professional video work anyway - and the times when I've needed to use my phone, the standard HEVC codec is more than good enough for run and gun shooting.
