Happy with the turnout. It's different but definitely an excellent substitute, leaving similar satisfaction as bread.

But... I have honey in my kitchen.., I would have to go out and hunt some Xylitol before I can scoff on these later this morning.
Also, methinks honey carbs are OK in moderation also too as well every now and then from time to time.
Honey sugars are not metabolised very differently and have the same net-effect as sucrose, if not more if we're measuring by weight...

You can have around a tablespoon, but make sure you watch your carb intake throughout the rest of the day.

60ml/g cream cheese...
2 eggs
1 - 2 tsp xylitol
0.5 tsp baking powder
0.5 tsp cinnamon
Blend/beat, let the bubbles settle for a few minutes, and voila.
Cream cheese is better at a warmer/room temp. But cold works fine with an electric blender.

Yeah, I'm not convinced about the safety of it. Pity, cause it is easily the best alternative to sugar I've ever tasted.
Apparently it's lethal to dogs too, like 2 grams ingested by your pet and it's game over!
Most reviews say it's a perfectly safe and natural alternative to sugar but I'm a little skeptical of it. Let's just say I wouldn't be surprised if in 10 years time there is a medical report released linking Xylitol to some or other fatal disease or condition.

Xylitol has no known toxicity in humans. In one study, the participants consumed a diet containing a monthly average of 1.5 kg of xylitol with a maximum daily intake of 430 g with no apparent ill effects. Like most sugar alcohols, it has a laxative effect because sugar alcohols are not fully broken down during digestion; albeit one-tenth the strength of sorbitol.[clarification needed] The effect depends upon the individual. In one study of 13 children, four experienced diarrhea when consuming over 65 grams per day. Studies have reported adaptation occurs after several weeks of consumption.
As with other sugar alcohols, with the exception of erythritol, consumption in excess of one's laxation threshold (the amount of sweetener that can be consumed before abdominal discomfort sets in) can result in temporary gastrointestinal side effects, such as bloating, flatulence, and diarrhea. Adaptation, an increase of the laxation threshold, occurs with regular intake. Xylitol has a lower laxation threshold than some sugar alcohols, but is more easily tolerated than others such as mannitol and sorbitol.
